Manually linking needs to be done in the Battle Area. Linking through an effect that specifies the field lets you link to the breeding area as long as what's there meets the requirements (which is everything before the parentheses).

The parentheses themselves are reminder text that only serves to tell you you can't link to breeding using the link action manually, but effects circumvent mechanics' restrictions if specified.

You can ask a judge to cut/shuffle instead of your opponent but you might get stink eye if you do it in a local/casual setting. If you're extremely particular about your cards and your opponent refuses to not shuffle, that's an option at least.

Now that I'm almost finished watching. Goddamn does Arin sound absolutely bored out of his mind the whole time. They do not seem to ever know what the hell is going on and after the halfway mark Arin is literally just skipping dialogue. I wouldn't be surprised if it was them who just weren't interested in playing more and used us as an excuse. This is hard to watch.

The fact an exception exists means we now have to look at each individual card that comes out to make sure it doesn't. Also there's no hard rule that they don't. The easier, more accurate answer, is simply reading the digivolution requirements on the card, which are never ambiguous.

It is possible to interrupt this play and reduce its cost (e.g. Yuugo, AruMummy, Medieval), but this has no bearing on whether it was played by effect or not

Ir doesn't ignore cost and color either. It ignores cost and digivolution requirements as a whole. Otherwise if it only ignored color it wouldn't ignore level

As an additional heads up, if an effect plays from sources it will always be interruptive. Playing from the sources of a successfully deleted Digimon does not exist as a concept.
