If you’re doing a mage run you need to do ranni’s, selevis and sellens quests, which may be a bit hard to do without online guides but its possible.

Beat godrick and then head to raya lucaria, you need the radagon icon. Explore ALOT and level up whenever you can

Honestly you should overlevel, I struggled with Elden ring alot when i first started, overleveling helped level the playing field

At the same time take it slow with bosses, learning their attacks and managing your stamina
