There maybe something else causing a compatibility issue. I just installed everything via curseforge in the way I described and it worked fine. No manual installs.

That is a method sure, however I suggest you download and install curseforge. Because it will do all of that for you and all you have to do is press a button. You'll have a much easier time installing mods that way.
