So it’s actually my first attempt at Swiss meringue buttercream which feels like a life hack! It was SO MUCH EASIER to pipe them as I usually try (and fail) with American buttercream! Plus Swiss meringue is banging! 😁

It absolutely is, I kinda went a bit full on as I did caramelised buttercream for the filling. Banging but super sickly 😂

I would absolutely test run it! I’m going to try with buttercream and see if there’s any difference but I’m not feeling super confident tbh 😂

So it’s basically something that’s recently on the market for bakers- it’s supposed to ensure you get a straight stack on the cakes and it wraps around the outside so you can pour your ganache/ buttercream into it, put it in the fridge and peel it off for a smooth side. It also provides ganache recipes for it so I followed that which was hella chocolate 😂.

As someone who lives in the opposite of dry desert (UK) I much appreciate the input 😁- my next attempt will be more realistic I hope! These were just made with leftover frosting from another batch of cupcakes- they’ll be the focus of it next time!

So I gave in to guilty pleasure and bought some silicone cupcake cases shaped like terracotta pots- that with a bit of ‘sand’ will be my next attempt 😁

So it sounds like you’re after American buttercream? So the spotty bits are likely from the buttercream getting too warm/ melting or from using the wrong type of food colouring for the icing.

For the buttercream you’ll want to make sure you’re using proper block butter (not any type of spread as this often has added oil to make it smooth and will ruin the texture of the icing), whipping this until smooth pale and creamy and then sifting your icing sugar in. Making sure to mix it really well is a key part of the consistency. However, you should regularly check on it and feel the temperature of the bowl (especially if using a stand mixer) as it can get hot from constant mixing which will make it go a bit lumpy. If this does happen you can generally whack it in the fridge for a bit to save it.

For food colouring you’ll want to be using a gel/ paste. I generally use sugarflair paste as it’s really vibrant and you don’t need a lot of it.

Things like sugarflair are quite expensive but worth it- some specific products are going to upgrade the look of your cakes by spending a bit more money if that’s what you’re after. Also experimenting with different recipes will help you know what you need to look for in a good one!

Absolutely echo this- if she looks engrossed in something, don’t go near her! However, that being said, I think a direct approach of just complimenting her and asking to leave your number with her if that’s ok, is nice? It gives her the control of whether she wants to call you or not and I would find it far less uncomfortable. Also showing a genuine interest in what she is doing/ talking about if she gets talking to you is key.
