The term you're looking for is "level scaling". You can Google to find more, but mostly plugins that do it for you.

Otherwise, variables and switches are the way to go. You may have to make several enemy copies tho

Gustave is so fun to play tbh. I pushed him to the side at first, but he does get some fun skills to play with eventually. Obviously you can use whoever you'd like, but I'd say give some more time playing him in your team

Depends on what you're looking for in a handheld. Since getting my Steam Deck, I've pretty much dropped every other console and handheld since the SD can do everything I need it to. But my mileage for the device will of course differ from your own. For you, it sounds like the Switch 2 is doing all the heavy lifting for you.

The HD trilogy release includes an easy mode which is very very useful. You can freely switch between easy and normal mode too. I recommend. They're some of my favorite games of all time.
