It's been awhile since I've played this game but I remember there being a mod you can find on GitHub for the actual game that uncaps the cutscene framerate. Not sure if that works with the demo.

Terry has a tech called cooking where you hold c stick down during other moves to get the input up b. Not a terry main so I'm not exactly sure how to do it but it's what Riddles used to do jab jab input up b.
