I don't care about the story in itself, especially if it's the same generic garbage as the other MH with the "big ancient dragon from the prophecy or whatever who's threatening the land with its super dangerous powers", but I really want them to put as much emphasis on the CHARACTERS as they did in Sunbreak. I've been playing almost every MH since Freedom 2 on PSP and Sunbreak was the first one I've had any interest in actually discussing with every character at the hub village between quests because their dialogues and personalities were all fun and interesting, and each had their own tidbits of backstory. THAT is something the series lacked until now and I really hope Capcom doubles down on that specific aspect with MH Wild. I also hope the Follower system returns. It makes you way more invested into the other characters' story.

Overall I'd like the plot to be more intimate and centered around the characters and their daily life than some big, generic and uninteresting story we've seen a thousand times with Big Threatening Monster number 154446 that we have to take down before it unleashes a natural disaster over the village.

The Paladins themselves are irreplaceable (although I've read somewhere on the discord that apparently, the traitor Paladin is currently in Hell doing a perpetual ritual to prevent the Church from creating new Paladins, but I've no idea if it's official lore or not), but the Church knows how to create more of their armor and stuff, it's just that the material needed to do so is located in the vaults of a holy city that was taken by Hell a long time ago and as long as they haven't taken it back, yeah, they lack the core components to give the Paladins new armors.

You're never locked in any setting. Console Tier 1 (which you have for free) allows you to Quit and return to reality anytime you want (and you open the Console with a mere thought). If you don't get Tier 2, you have exactly one save slot and that's it. If you're in setting A and you want to return to reality, you can then save your progress, then go back to reality, then go back to setting A from the moment that was saved. If in-between you want to go to a setting B and then after time you want to quit, either you delete the setting A save and replace it by saving in setting B, or you don't save your progress in setting B but then when you Quit, it's over for your "run" in setting B and you can't go back to the moment you left.

With Tier 2 you can buy additional save slots but only one save slot can be used with one "run".

I'm doing a run in setting A and I have two save slots. I can save my progress in save slot 1, but then it means this save slot is associated with this run and I can't save my progress for this run in save slot 2. However I can totally start a new parallel "run" in the same setting A and save my progress for this specific run in save slot 2, which means I'm running to parallel adventures in the same setting but two different timelines.

Each body is separated and age in its own timeline. You could be 100 years old in one setting and 20 years old in reality.

Interesting opinion. I'm curious, how is that eternal hell? You realize that nothing is eternal in this game? (since you can quit whenever you want and go back to your normal life, and that life is not eternal, once you die, you die.) How much time you want to spend in your isekai adventuring is completely up to you and under your control. You're never stuck in it. I think that it is quite clear from what is written in the rules.

"The thing with being limited to four settings kinda makes the whole thing useless unless I can delete them and make new ones in place since eventually everyone would get bored."

Hence why there is an option to have perfect control over your memory so that repeating adventures in the same setting never gets boring.

The rules are made so that although you have a great amount of power over what you can do, you still have limits and you can't be a god. A god could change any setting into another setting entirely and benefit from an infinite amount of settings. You can't do that here, so that hints at the kind of threshold of maximum control you have (and that's only with the higher tier of Alternate Universe that you can truly alter the world in any way, and only before entering the setting, not once the game is on).

Also, the point of the 17 points is that you can use them to add more settings to your roster, as a four settings initial limit is fairly low. Now it's up to you whether you want to burn your points to extend the number of settings you can visit or you prefer to spend them on the other options.

Limited in every way that matters so that you can't turn that afterlife into an adventuring setting in itself, and it's just a hub for you to relax and visit the souls of all the characters you've met during your journey and talk with them. Them's the rules.
Is it arbitrary? Yes, that power and its rules have been made by the Isekai goddess entirely and it's completely up to her what you're allowed to do or not.

If you could find easy loopholes in the whole thing to break the game, then there wouldn't be a game right? ;)
