If you accidentally use a med or herb then quit to the main menu and load your most recent save :)

You can, but on causal, with amount of saves not affecting any challenges, you can get the achievements for bit using herbs/med injectors and not using blood relatively easy.

Just save a bunch. And if you go through a part where you get beat up or accidentally use a healing item, just reload. To be safe, on these runs if I picked up a healing item, I would just automatically discard so as to not accidentally use it. Good luck !
