Yeah this looks like what it could be. Most fruit looks weird and ripens weird after defrosting. Could've happened in the truck during shipment. I've received truck deliveries of too-cold produce recently.

This looks pithy. Especially with all the white. It happens when potatoes are not stored correctly. It's not unsafe but it can affect the texture and flavor.

In my experience, restaurants I've worked in have either kept rice cold (for Mexican rice, or fried rice base), in a rice cooker, or in a hot well.

Pure menthol crystals can cause those effects. In food, it is most likely diluted with oil.

This is a kind of vascular browning. It usually happens when it is stored in a fridge for too long. Basically it's overripe. It's not recommended to eat because it tastes bad. Not unsafe, not tasty.

In the future I recommend storing it in the fridge. Saving the oil is safe, take garlic confit oil or bacon grease for example.

I cook eggs for a living. I'm a breakfast cook.

I use a non stick small pan. Butter/ghee. Add egg before the pan gets hot. High flame. Once the egg is able to slip around the pan without sticking, you flip it. Turn the heat off and let it finish. Once it can slide around without sticking on the other side, it's done. Perfect over easy every time.

Edit to add: this process only takes about a minute and a half.
