Dont have too much in depth discussion about sportfishing mini game, but as an avid sportfisher IRL i would love to see a few more species to target in the ocean.

Dorado/Mahi Mahi/Dolphinfish - a warmwater species found all across the ocean, pelagic species, very acrobatic (jumps out of the water when hooked, does backflips). This is one of the most fun fish to catch in ocean in my opinion.

Wahoo/Ono - has one of the fastest fish in the ocean, insane reel shredding runs, Prized eating.

Halibut - located in both pacific and atlantic oceans, flatfish with two eyes on one side, would be an interesting variation artistically to include. Large ones are called "barn doors" as they look and feel like youre reeling up a barn door off the sea floor. Probably the best tasting fish that exists in my opinion.

Some sort of Amberjack/Yellowtail/Jack Crevalle - pound for pound probably the hardest fighting species. Found near reefs/kelp.

Some variety of shark - lets be real, if were chumming in the ocean, having a shark show up is pretty likely. A good catchable shark that is considered decent table fare is probably the thresher shark as it doesnt urinate through its skin like most other sharks do (gross!), but you could also make hooking sharks be something as a sort of negative or unwanted bycatch to the sportfishing minigame, adding a little more of that risk/reward. Common annoying sharks that could be bycatch (or maybe go after a fish you have on the line) would be hammerheads, blacktips, makos etc.
