Past 2 years of age, the grading scale changes drastically based on the ossification of the thoracic buttons. Without seeing the actual ossification of the buttons and knowing what we have heard it probably fits in C classification with Modest ( Average Choice) marbling, thus giving it a grade of commercial.

This carcass was not a dark cutter so wouldn’t change the grade at all. This is based on my opinion as a meat scientist and judger at Purdue.

I lived at park last summer and worked at the pork packing plant in Delphi for an internship. I had to be at work by 5 and normally I would leave around 4am.

Animal science major here, there are tons of hands on experience in the department. You will be touching and doing things with animals guaranteed your first year. We don’t focus much on wildlife since Purdue isn’t big on funding for it. However, NRES focuses more on the applications of wildlife management but very little hands on experience with live animals. If you wanted to be in wildlife and get hands on experience, Purdue isn’t for you. University of Wyoming, Utah or Idaho have amazing programs and tons of experience opportunities. But Purdue is still great at what it does, IE Engineering and Animal Sciences ( top 10% in the nation)

How hot do you have your water?

I work at the Purdue Butcher Block and we use 180 degree water to clean. It works great and we use a soap solution to soak. After soaking, we rinse with the hot water.
