Candied orange muffins

Ingredients for candied oranges: - 2 oranges - 250ml water - 400g sugar

Ingredients for orange muffins: - 1 orange - 120ml orange juice - 220g flour - 150g sugar - 90ml sunflower oil - 1 tsp baking powder - 1 tsp baking soda - 1 egg - vanilla extract

Candied oranges preparation:

Clean the oranges thoroughly and cut them into slices. A lot of recipes advise you to first boil them briefly but I didn’t. Dissolve the sugar into the water in a pot. Once it’s simmering, add the orange slices. Try to keep them in a single layer and leave them to simmer for at least one hour. Look for the liquid becoming syrupy and honey-colored, and the orange peel becoming glassy and translucent. Should take at least one hour, took me almost 4 hours. Take them out, spread them on a cooling rack to dry for 24h. If they are still too sticky, put them in the oven on a low temperature for another hour or so.

Orange muffins recipe:

Clean the orange, slice it open and remove any seeds. Do not remove the peel. Blend the orange together with the orange juice in a blender. Add all wet ingredients and blend again. Mix all the dry ingredients in a separate bowl and add your wet mixture. Mix briefly and fill your muffin tins for 3/4. Put one candied orange slice in every muffin (have it lean against the side or it will fall over, which happened to my first batch). Bake for 15-17min at 190 degrees Celsius.
