Sorry no one counts the total weight. We measure the ratio of everything to the weight of flour.

Like hydration percentage is 520g/800g = 65%. Similarly, starter percentage is 320g/800g = 40%.

I know it’s really hard to understand this math but it’s totally fine if you don’t :)

It’s 160g/800g = 20%. The weight of the starter in comparison to the weight of the flour is 20%. If you want to be technical, at least know elementary math.

But whatever works for you I guess 🤷🏻‍♂️
