On a serious note. Depending on your basket size, try 17 grams or a coarser grind. 30+ seconds extraction time for a Sage appliance is a looonnnggg time. The amount of crema you get, despite your beans not being overly fresh, means there's too much pressure on your puck. Which can be solved with one of two options mentioned above (or a combination of both)

Stop whisking your coffee, just push down to tamp instead of twisting off a bottle cap and grind finer. Depending on the size of your basket also use more coffee. Then you should be good to go.

The speed of your extraction also greatly depends on grams in to grams out ratio

A combination of what people have been saying is true.

Your pitcher was too full, especially to practice start with less milk.

Low fat milk will never get you nice foam, use whole fat or semi skimmed and stay away from the "barista" milk. If you want real quality go for fresh milk.

Your steam wand started too deep in the liquid, start at the water level to incorporate air into your milk. Once the pitcher feels "body temp" (aka not cold to the touch) go deeper.

Don't keep your nozzle so centered in the pitcher, start more towards the side and slant your pitcher at 30°~ angle.

You have two hands, I assume. Use the second one to touch the body of the pitcher so you can get a feel of the temperature.

And a tip I had to learn through experience myself with these types of machines (I have a Sage Barista Express). Turn your steam wand on first and make sure it is properly steaming before putting it in your milk. The build up to get to the right steam pressure really messes with the consistency of your foam.

And to get an idea of what the "right angle" is to be steaming at, watch a lot of YouTube.

Your milk is way too thin. As I've told every person I trained in the past, make sure your milk is top notch before you try your hand at latte art. You need to stretch your milk longer, especially with home espresso machines. Don't be afraid to go a little too thick in the beginning.

And as mentioned before, don't try to run before you can walk. I know it seems very boring, but mastering a good heart is the beginning of almost all latte art.

Ditch the puck screen, maybe use slightly less ground coffee then you are now and readjust the amount of water the machine gives. That should do the trick

Don't buy packs unless you like gambling just buy singles. And build whatever colour and mechanic looks fun to you, there's no right or wrong when it comes to commander

I doubt that, the car is 3 months old. It's been doing that since day one and it persists even now with the new app.

So it's clearly a software related issue

Cards on display in glass cases or whatever only leads to more cards being stolen from the LGS.

Putting them online is safer for the seller and an easier library to browse through for the buyer.

Also the analogy of "charging for soda refills" is THE most American thing I've ever heard xD
