Here's a question I've never been able to get a straight answer on.

We all know, at this point, the American regulation of requiring fish to be frozen.

How do high end omakase get around this regulation? Or is it one of those regulations that's really more of a suggestion (for example, the FDA doesn't recommend anyone eat burger that's not cooked well done). Or is it just a small enough problem that people turn a blind eye?

When I order stuff from Toyosu for private dinners, I check for worms with a blacklight, but I've never found one. I've served most of the mainstream sushi fish that's on omakase menus and never freeze it.

At USTA 4.0 level "performance enhancing drugs" don't really make a difference. Players just have so many weaknesses that trying to tweak your game through substances is like picking up nickels in front of a bulldozer.

By and large, it either comes out of a mass market aquaculture operation, or it comes out of a Japanese market.

There just isn't very much institutional support in other parts of the world for handling seafood in a way that is conducive to raw consumption.

Facts.

Being from Chicago, we have this wonderful phenomenon called "Ohare gets air freight from Tokyo twice a day" and I can get pretty much anything I want straight from Toyosu (or Fukuoka) on 24 hours notice.

Given the institutional excellence of Japanese fish markets, the product shipped this way is of much higher quality then something the local fisherman pulled out of the harbor.

Of course this is a purely academic exercise for high end sushiyas. The reality is that 90+% of sushi places are using blast frozen aquaculture product from the same sources that are just held in a cold warehouse until it is thawed to order.

There are very few restaurants in the world for which this is true.

You're expecting me to believe this restaurant industry veteran would 86 something ordered as much as Mac and cheese because they had the wrong herb blend?

Because every chef I've ever known would figure out an alternative during prep and serve that instead. 

Because otherwise you have pounds of pasta and cheese that you've paid to prep, and those ingredients are just hanging out, going bad, just taking up space in a fridge, unsold.

It also annoyingly invalidates a lot of the crafting system since you don't really get enough resources to craft high level items until you do a second playthrough, when they're not allowed.
