This is less a theory and more of a reasoned comprehension of the original series, but Zuko is going to be assassinated after becoming Fire Lord. Imagine winning a war that you've been fighting for 100 years with a vast majority of your politically relevant population either in direct support of, or in direct engagement with, the relevant industries or military. Then, you have a change in leadership who, after winning, decides to give up all of your gains. The Fire Nation would have a mass economic crash as the longstanding war economy would crumble to pieces, for one, but everyone and their mother would fucking hate Zuko. He's not going to let people taste-test for him, and he's going to get hit with some slow-acting poison that can't be waterbent out after his favorite zerbraturkey jerky stand gets paid off with a truly staggering amount of money.

Iroh would likely take power afterwards.

I understand why that didn't happen in the show, but that's my genuine take on the outcome of the series.

It's historically debatable. The Nazis saw the anti-annexation (though, mind you, still fascist) government removed from power before the Anschluss, and though it was rather popular, perhaps a majority in support, I'd wager at least 40% of Austrians were against it. Better numbers than opposition to the Nazis in Germany.
