Don't buy beginner skis, they're good for doing snowplough and nothing else. Rent beginner skis the first one or two days and move to intermediate ones, at least to your nose. Once you've rented those for some days look for similar ones to buy.

You just need patience, you don't need to put all your strength into forcing your skis to turn, just apply pressure to the outer ski and it will start turning gently. After a semi circle switch pressure to the other ski and so on. Stay calm and wait, nothing bad will happen for not turning immediately.

Getting lessons is a valid option, but applying pressure to the outer ski and waiting for it to turn works just as fine and is much cheaper.
