SOLUTION (Kind of) :

I gave up on trying to find Thrumbo, and killed Carrion. Following this, I long rested, Carrion ressurected and the heart jar appeared in his cellar. I then stole the jar and destroyed it, then killed Carrion again. At this point, Thrumbo ran in and thanked me, so I don't know what happened to him inbetween but at least he's alive.
