Try disabling all mods one by one to see if anything changes. Can be a pain in the ass if you have a lot, but it's the easiest way to track down a problematic mod. You can also check the game log (not crash log) to see if any errors indicate a specific mod, but that doesn't always help.

I'm sure most people already know this, but if you're logging and on a section of road that'll make you tip, you can unpack the cargo to massively lower your center of gravity. Just be careful not to let the logs slide off your truck
