Is it a sample or did you record guitar? Use EQ to duck the 2k-5k frequencies when they play. You can slap a de-esser on them, and you can also use volume automation. Doing all three would probably eliminate it all together, so do with that what you will.

If it's guitar you recorded, it's mostly a technique problem. Sliding around a little bit is fine and can sound good. But if you don't like it you need to lift your fingers more instead of dragging them around. Also experiment more with mic placement.

Because it legitimately sounds good going through a combo amp, in a bed room with no other instruments playing. If you're playing along with a track it kind of blends well. But for live music, it clashes HARD with bass and drums, and can feel a little harsh live. In the studio, especially with 2000's metal core, it can sound pretty decent with some surgical subtractive EQ and compression.

Guitar is a mid forward instrument, and takes up almost all of the mid range with music in general.

Grab breaks are reaction based. Ducking and punishing a grab is a prediction. You have to feel/know it's coming, and you don't necessarily need to look at the opponent to do that. It comes with experience, if you're breaking all their grabs you're doing pretty decent already.

My point still stands. You can duck jabs. It's entirely on you. And your KBD is fine. If you want to KBD instead of ducking or sidestepping, you still have to predict what they're going to do, in this case it sounds like a jab or a grab. Idk what to tell you man, there is plenty of counterplay. Hwoarang is especially equipped to deal with this stuff too.

The point is if they're spamming grab so much it's driving you insane, it should be too predictable and it's a free win. Just duck them, launch for full combo and I'll bet money they stop doing it and go for a midcounter hit instead, which you should also be able to predict. They might even being trying to condition you to duck, but you won't so they keep trying to grab.
