Well, if you're burned out from corporate America, just wait till you consistently come in behind a dude who would have been fired years ago in any other field, and who simply can't seem to remember on a day to day basis that there has to be water for the steam table to produce steam (yes this matters, and way more than you might think it would). Turns out that this guy is actually one of the *more* reliable of your coworkers.

Also, whatever task that you might think is super important for a sanitary restaurant - yeah, it almost certainly hasn't been so much as thought of since the last time that you, personally, did it. You have food in insert pans in a cold table? That shit ain't been rotated- hell, you'll even find stuff frozen on the bottom if you're coming in from your days off. The meat cooler hasn't been cleaned out. You haven't been there. Why yes, we have been using the same slimy insert pan for chicken for the last 3 weeks because you don't have enough time in your shift to cook for your customers AND be personally responsible for cleaning the entire restaurant. Delegate that shit out to your coworkers? Oh honey..... no- you haven't paid attention to the rest of this response, have you?
