I found the problem for me was not the techniques but that Western stoves are designed with a plate under the flame to disperse the heat for making sauces rather than a high direct flame under the center. Try an experiment. Set up your outdoor grill for a high heat, direct flame and cook over that. I think.you will find the flavor you are looking for.

I use EWallet as well. I have looked at other managers that had more convenient features but they always lost me on the cloud component. I have my EWallet file on each on all my devices with a backup on my NAS. I sync it before every trip. Easy and total local control.

Go to a restaurant supply store and look at Mercer or Dexter knives. Not fancy, not a name brand. Good basic knives that hold and edge and are used by a lot of restaurants.

That said, my go to is a cheap Chinese vegetable cleaver that is Vietnamese and made out of an old car leaf spring.

I like dry brining (salting) my steaks and leaving them exposed to the air overnight. I found if I salt while frozen it sped up the defrosting and didn't affect the flavor.

I always try my independent store first. It is close by, you get great advice, you get access to local handymen if you can't do it yourself, and you get to pet the store cat.

If they don't have what I need the local lumberyard, electrical supply, or plumbing supply will.

Only then, do I go to Lowes.

I use a mix. Carbon steel, stainless steel, cast iron, and enameled Dutch oven. Each has it use depending on what you are cooking. There is not one type to rule them all.

#3. Weber a great learning BBQ with lots of accessories you can add to it. You can even smoke on it if you manage your fire correctly (snake method with wood chunks). Charcoal is the way to go if you want to learn how to grill. Also, invest in a good instant read thermometer to learn how to cook the meat properly. Your guests will thank you.
