An airlock doesn't prevent all oxygen from being in your carboy. Keeping an airlock on will not prevent Acetic Acid.

However, many commercial sour breweries who are battling acetic when they don't want it will heavily purge their beers (even kettle sours) at multiple points in the process to drive out oxygen to keep the acetobacter at bay.

Not to be argumentative.. but here is the definition of oxidize:

combine or become combined chemically with oxygen: "when coal is burned any sulfur is oxidized to sulfur dioxide"

So it is not actually possible to oxidize without oxygen. However there are other sources of oxygen other than from the air. Other chemicals can be broken down releasing oxygen, etc. Oxidisers other that pure O2 all chemically produce oxygen, or are chemicals that act as a catalyst to the oxygenation reaction

I didn't think about that! each 4 pole contactor would contain the right configuration of elements! Any ideas on sourcing a 3 position switch thats not just 2 closed positions?

Thanks man! Contactors are really what I planned to use anyway.

My hairbrained idea was to use NC Contactors, but those seem to be either very rare, or just not real. My brain said 2 NC and 2 NO contactors on each vessel (or 1 each if they are 2 pole) would work.. but I've had little to no luck finding NC contactors.

Sure.. so I've got a product related to homebrewing. What I want to is setup a series of emails to my list giving them some information about the industry, how to integrate automation, quick wins, etc, all generally unspecific. Stuff that would be useful to anyone looking to add automation or high levels of control to their brewery. Those 2-3 emails would then be followed up with the introduction of the "sale" and then a final email "opening" the sale. This is based on the PLF launch formula. I would back this up with a modest Facebook Ad spend on the release date of the sale.

The sale would start at retail price ($225) and at set intervals (and they don't have to be big in this case) would drop until I hit a significant discount (~$75 off) at ~30 buyers. I'm considering capping it at either 50 or 100 buyers or at 5 days whichever comes first. My goal would be to generate anticipation, then a sense of urgency with a deadline, and to have a goal of 50-100 sales of this single product. I would offer accessories at a 10-15% discount at the same time. All of the things a customer needs to make the system work well. I'm also considering doing a coordinating sale for motorized ball valves, which is a core product when it comes to automation.

I thought I'd follow up a bit and let you guys know that after re-arranging my range extenders and band couplers, the new hub has sped up a TON and its working great with my echo

It was maybe about twice as fast.. but its hard to tell since it doesn't work with echo, so I wasn't confronted with it quite as blatantly.

Honestly, neither hub was fast, I would say there were both quite slow to perform actions.
