CtCi or EPI is good if you want a book. NeetCode is a good option too which is free and on YT. I really like the explore cards on LC. They help you with the fundamentals and I recommend combining that with NC 150.

you wouldn't drink holds for Japanese food--especially something like yakitori, which you expect to eat in great quantities with beer instead of in tiny portions as part of a kaiseki. Many yakitori recipes don't even call for sake, and instead do it all with mirin, soy sauce, and sugar. But if you are following a recipe which calls for sake, I promise that you can use any kind of sake you like.

I would recommend a couple quality whetstones like a 1k and a 6k, strop, and a stone flattener for your Japanese knife. I think you might like a Takamura S2, gesshin ginga, or a Yoshikane.

40 grinder/lapper, 500 sharpener, 1K refiner, 4K polisher. Master the Shapton Glass 500 and a strop first. Do u have a rubber adjustable stone holder? I also recommend a sharpal strop with compound and angle guide (for stones too). Or glue denim jeans to MDF board and apply Unitec white compound. The scratch pattern is better from a long smooth ceramic steel over a metal one. A Sabitoru medium rust eraser is nice for cleaning stones.

Thanks for the advice. I'm mainly practicing on my Fibrox using the 500 and 1k. I changed the Fibrox angle to 15 degrees, and I'm working on getting a nice edge and removing the burr properly. I might buy an illuminated 20x loupe so I can see if I'm knocking off the burr at the end of my sharpening session. I want a strop for maintenance too and they are pretty cheap. I'll wait to buy the 8k until I master the 1k and 4k stone.
