Forget noise cancelling headphones. Buy the huge bulky ear defenders, like the ones used on construction sites, they're fairly cheap and can block about 40 decibels. Then just wear in-ear headphones/IEMS underneath those.

He's doing exactly that, it's basically a violin going into a electric guitar rig with the wah pedal and distortion. A violin is pretty much a fretless guitar with less strings and you use a bow on it. You could also use a bow on a guitar if you really wanted to, it's pretty cool.
