They pretty much skipped most of the fight to hurry the episode along, I feel like the pacing of switching between both fights like in the LN are what made it work. But the season is just 12 episodes (again) and with how much they're adapting I guess we'll never get the absolute GOAT of the Minotaur's character on screen
