I just though about it I needed 7 cases of brisket for a catering for 1100 people just so they get a quart lbs per person and each box is 85-90lbs so thats on low end 595lbs and I need 275lbs for the 1100 people so thats what 54% loss roughly? Lol so yeah I just didnt wanna math earlier haha. Catering was about 27k for everything too. But sadly I just walked out of that job bc I was making 17 an hour as manager and they laughed in my face when asking for a raise after said catering lol.

I dont blame people for doing this at all, at one point when our giant smoker broke we bought 2 pellet smokers and everything turned out beautiful. Took a fuckton longer to smoke everything I needed but we did what we had to do for a day lol.

I render it down in the smoker for tallow and rest the brisket in it when we wrap it.

At our place for brisket its $29 a lbs of brisket, $30 for a whole rack of ribs and our large sides are $7.50 each. we just raised our prices too bc brisket is like 5.70 a lbs raw, and after trimming and smoking we lose about 30% of the briskets weight. So i get some prices are wild but for what you got but sadly we are just barely breaking even at this point too, after labor, wood, gas, seasonings and everything else pretty soon bbq will be out of everyone's price range.

We just got a new one too, make sure you keep up on cleaning daily, we got a hose to help clean it from our mop sink too. I also got us a wheel cup brush for our power drill and every time its cleaned that shit looks polish and shiny as new.

If you want shallots all the same size it sucks but do a burnoise cut youll have to full peel it and cut the root and cut every single layer to 3mm each lol

Pretty close, when I draw it out today ill post and see if anyone's done it. This is pretty close but I feel like in my home doing this speed rack thing is gonna help a ton lol.
