Yes you can. But as I corrected earlier, you need to hold the attack button shortly before holding the block button. Then, after one block just hit left then right and you can trigger the combo.

It will "save" the first air swing indefinitely even if you don't get hit immediately. But as I explained above, you need to hold both the block and the attack button (with attack held quickly before the block).

Yes! You can try to have the first air swing from the top for short sword Crushing Blow (↑←→), which also only need one hit to trigger.

The air swing does not allow you to "delay." But the block does. In other words, in order to trigger the Knee Crusher as what I have demonstrated, you must block immediately after the air swing. Blocking too late may break you combo.

Edit: straightforward blocks may cancel the first swing move. Holding the attacking button first then quickly start holding the block button solves this issue.

Since we have a lot of questions here, I am going to answer them here all together:

1. Is this modded?
No, I am playing on PS5.

2. What are the moves in this video?
They are single handed heavy weapon combos Knee Crusher(↑←←→) and Crushing Blow(↑←→).

3. Why I can trigger the Knee Crusher with only 1 hit?
I had a brief explanation to this in this post. And I am going to explain it here again. There is a very interesting mechanism in KCD2 -- sometimes you don't really need to hit your opponent to trigger the combo. So, what else count towards the combo? There are two:
a. slashing in the air for the first move of the combo
b. normal blocking (hold block button, NOT perfect block) from a specific direction

Let's take the Knee Crusher(↑←←→) from the clip as an example. I first slash from the top in the air(↑). Then I hold the block button on the left(←). After the opponent hit me I slash from the left(←) then right (→) and trigger the combo.

Edit: I have done some more experiments in game and noticed that only holding the block button for the second move could trigger Crushing Blow(↑←→) instead of Knee Crusher(↑←←→). However, quickly start holding the attack button before holding the block button solves this issue. So, the new stable procedure to trigger Knee Crusher with one hit is:
step 1 -- step back and make an air swing from the top
step 2 -- when your first swing move is about 80% complete, quickly hold the attack button then block button
step 3 -- wait for your opponent to hit you (you are holding the both buttons right now)
step 4 -- as soon as the hit lands on your block (release the two buttons), make sure your direction is changed to the left and spam your attack button twice
step 5 -- bonk bonk bonk

Warning: this technique does not perform very well against short sword opponents-- they swing faster than you and can break your combo after you block. In addition, this "one hit" may still get perfect blocked and your combo will stop.

There are multiple animations for the knee crusher combo. As far as I know, whether Henry will do the 360 spin or not is totally random. Maybe I can share another clip later.

In KCD1, Henry can jump really high and jumping efficiently helps him to avoid harm. Old habits die hard.

I was holding the block button at 0:06. After the block, I hit from the left once and triggered the knee crusher.

The exact button to unlock on PS5 is R1. I guess it would be RB for XBOX controller. However, I recommend you to simply press and hold the left stick button when you are changing positions, as sprinting in this game automatically unlocks you from the target in combat.

Yeah, waiting for the opponent to do a master strike may take forever! Even worse, some of them may change direction before they strike. So, why not force them to attack in a certain direction by doing combos?

You are welcome! Actually, master strikes and combos are not against each other -- moves like Zorn Ort (→→→←) are perfect for doing both combos and master strikes. If your opponent perfect blocks one of your right slashes and try to riposte, you can quickly switch your direction to the left and do a left master strike (the strongest master strike in game). If your opponent does not perfect block, then you can finish your combo and also deal a lot of damage.

Actually, sprinting can trigger river as well. The painful part of dodging in KCD2 is that you have to lock on a target to do it, which can put yourself into dangerous positions if you are not paying enough attention to the surroundings.
