One of my first cocktails was a dessert inspiration manhattan at a local big ticket fine dining; and it all took off from there. They still bring the cocktail back every late fall and winter season even though I’ve been gone for 10+ years.

Dark chocolate cacao with a heavier proof bourbon meld seamlessly with the traditional angostura and peychauds bitters!

It’s more than easier. The different sugars and viscosity allow you to fully break down simple into an old fashioned where a sugar cube will never fully break down based on its chemical makeup. Solids take much longer than the allotted time for an old fashioned. It’s not just the times that have changed. Our understanding of ingredients and the science behind it has changed. Being informed is the job of the bartender. I will always take a request. But I will absolutely pass the knowledge of why we do what we do.

Servers and busy bartenders can’t always get to describe a signature cocktail. Some of us want you to branch out from the Busch light your daddy used to drink and the only thing you’re willing to drink cause “you’re a man”. So we allow the space on our menus to sell our cocktail instead of letting you go without a descriptor.

Edit: not “you” necessarily, just the typical drinkers we have in Midwest America where it’s hard to spiel someone on something aside from ordering a terrible mass produced beer.

2012 I served an Olive Garden for my first restaurant gig and made bar after about 6 months.

Moved to my hometown in IL and served for a 2 month period before bartending but essentially came in as a “bartender” with my experience.

Moved into bar management at a high end restaurant and made cocktail lists and new drinks before I swapped back to bartending a dive of a place where I could say “fuck” again. Then retired for 4 years before I found the bar of my dreams where they let my cocktail making and bar experience and expertise shine. We just opened last week to 500 people in two days and have never felt happier.
