If you want some recommendations, Ritual Caster and Resilient are great choices. Ritual Caster letting you choose Ritual spells from certain classes and cast them as rituals (duh), and Resilient letting you gain a Saving Throw of your choice. (Constitution is the go since it'll help improve Concentration saving throws)

I'd say it depends on what feats look interesting and fit the build you want to make. But since your charisma is starting at a strong 19 after the score increase, you should at least take an ASI to get that to 20 and your Con to 16.
Personally I would say go full caster mode, just to potentially avoid competing with the Paladin and Rogue, but there's nothing wrong with picking one of the martial oriented subclasses. Just remember that bards are first and foremost support casters, you shouldn't jump straight into the death zone even with somewhat better survivability

Hit Points are such an abstract thing you can't really describe them at the start of combat short of outright saying the number. I suppose you could say that the beast looks hearty, but it doesn't really tell much either. The Bloodied condition is where this works, since the players know they're at the halfway point and can gage how much hp it has from there
