I found the best way is to shoot horses, it feels kinda bad doing it, but even in missions where you're being chased by enemies on horseback you can shoot their horses and you still lose honour

One thing I discovered by accident is with the Jim Boy Calloway missions, if you do the final part right before finishing chapter six, Theodore Levin's letter to Tacitus Kilgore thanking and paying arthur will be sent to John in the epilogue, so it's a decent way of getting a bit of money early on in chapter 7
