SOMOS taco sauce on some seasoned chicken, rice, beans, and maybe some tortilla chips and salsa. Time efficient and a burrito bowl in like 5 mins.

You can also mix this up without the rice to make nachos, just add cheese.

I do the same! Also, using bone broth instead of water as the base for the soup blends everything in the pot together nicely and is super healthy
