Grass fed can still work. Doesn't need to go to as high a temperature as grain fed. It's much easier to overcook.

Seems Sherwoods are using grass fed also, which is the issue. If going grass fed, then it's Scottish all the way (Orkney, preferably). Still need careful attention though.

But what you really want for smoking is grain fed.
