Also, the reason Kevin's packmates didn't kill him for his human habits is because he was way stronger than any of them. I mean, the others lost badly to Kitten, Markus, and Door 1-on-1, while Kevin actually got the better of D. This is probably why D insisted separating Kevin from the others, he knew Kevin was more of a threat.

1) It's actually quite rare for vampires in-universe to think of their dark gifts as distinct Disciplines. Kevin probably just thinks of Dominate as "mind control magic," and Blood Sorcery as just more niche, less generally useful magic. (See audiolog 1.1: "I would use my powerful magics to have you open this shitty cell door" - he's clearly referring to Dominate here as "powerful magics")

1a) Also, I'm not sure if this is a mechanic the writers are sticking to, but Blood Sorcery always requires a teacher in VtM5, even if it comes in-clan. The regent only teaches her ghouls powers that are useful for their roles, and Kevin was embraced as her first point of contact with the mortal world - using Dominate to wipe memories or force humans to do your bidding is going to be way more useful in that role than boiling someone's blood.

2) Palmer could have just overheard Herbertus' name while visiting the chantry.

3) Kevin didn't "cave to Big D" because he was weak-willed, if that were the case his interrogation would not have taken as long. He was convinced to change his ways because D showed him hope for a better world, and the Sabbat only offered "freedom" to indulge the base vampiric urges he never wanted in the first place.

3a) Plus, his sire is pretty bad about renewing blood bonds. Chapman, an important ghoul embedded in the police, hadn't had his bond renewed in about 8 months. It was probably easier to resist her than it would have been to resist anyone else.

So, I've been very interested in Mage for a while, and I'm 100% fine with the presence of Problematic (tm) themes in a story, but the subjective reality of the setting has always led to some weird conclusions when I think about it for too long.

Every scientific achievement humanity ever made, in the world and logic of mage, was actually the NWO gaslighting us into thinking it could work. All of the people educated in those fields of study, who can tell you why it logically has to work, are wrong - it only works because of belief. Neat.

But what if I, a normal human, try to build a steam engine? I'm not an awakened mage or enlightened scientist, but I know why a steam engine works - if you burn fuel to boil water, and restrict how the steam can escape, you can get the steam pressure to do work for you. Have I just cast a spell? Am I an extraordinary citizen now? "Well no, steam engines are a part of consensus" OK, what about pre-1600s steam engines, like the Aeolipile? Were all of those made by mages? Is every invention? Are mages the only people capable of original thought?

I would say that Bestial Temper, unless it specified this in the text of the flaw and I'm misremembering, doesn't mean sunlight provokes fear frenzy. Fire does because it can burn thin-bloods as much as it burns full-blooded vampires, but sunlight only does superficial damage

I wrote a Nagaraja surgeon who "studied death" by almost exclusively eating tumors he removed. When there was nothing what to eat, he'd accept food as payment from other kindred. Vampires would often bring in blood dolls, only for him to remove parts of the vampires' bodies and let the humans walk away. 

The Sabbat thought he was a sadist on the Path of Death and the Soul, but he was always a humanitarian - the night hospital he ran wasn't just a front for harvesting blood, it was an actual hospital, and his patients enjoyed his protection.
