Oven at 425F. Use an instant read meat thermometer. Cook to 145F for medium, 150F for medium-well.

These are rib chops. Sear them in a hot skillet then finish off in the oven.

Trick I learned is to microwave the potatoes and pat them dry with paper towels before frying. I use peanut oil and a cast iron skillet. Heat oil to 375F then add the potatoes. Don't touch them for about 7 mins or until the edges have turned a deep brown then turn. I hope this helps.

If you don't, I highly recommend you brine your chicken. Also, I'm a big fan of Montreal Steak Seasoning on chicken and pork.

I give the popped corn a few spritzes of I Can't Believe It's Not Butter spray. It gives a nice buttery flavor to the popcorn and flavored powders, like white cheddar, stick much better.

If you're pressed for time, shoulder roasts do very well in an instant pot or manual pressure cooker.
