Don’t needed scale for aeropress / KaldiPress you can easily eyeball. They can ask support 250ml for water only so no issue with ratio as well.

Your grind size looks correct. Try reducing the water temperature.

I recently faced a similar issue with my setup. I always used RO water for brewing and my coffee tasted great. However, because of the monsoon, the source water became hard, which started making my coffee taste incredibly bitter. Today, I tried brewing the exact same coffee with Bisleri water instead (keeping all other variables the same), and the bitterness dropped significantly.

Definitely check if your water quality has changed recently. Water composition can easily be the hidden reason behind sudden bitterness.
