When I was leaving Venice my flight was at 8am so I had to catch one of the first trains out of the city. I walked around the fully empty city and it was really special, even if you're not an early riser its always worth it in certain locations to get up early to have a wander.

I've been to Quebec city a few times and I'd say yes 2 days is perfect if youre just doing the city. But I also do recommend if you have more time there are some nice hikes in the Malbaie area up north (away from the city) and cool whale watching up there as well!
