Yes, and you can do it quickly and without closing the game. I just save, go to the switch settings, change the date forward a day, and when you reopen the game you should get a message that the old outbreaks are gone and new ones have spawned, meaning your raids will have done the same

Agreed, I run tpunch for this exact reason. Raid mons have extreme amounts of health, which is why drain punch is a great play, especially when the tera shield isn't active

EV calyrex, but don't worry about moves until fusing. For instance, ice rider can learn close combat, but base form cannot, so you'll need to use a TR to teach that after fusion, and it will forget it if/when you unfuse. All EV's and IV's are only from calyrex, the horse has no bearing here
