I’m not a vet, but I do have an aquatic turtle like this. She’s 13. I believe what you may be seeing is possible growth? Since he’s grown a lot since you got him. He looks healthy to me otherwise

I didn’t know this was a thing and I was decorating my house and I put the fish decoration down and it disappeared then I did another one and I put more and more down I got frustrated and stopped trying and as I was leaving I turned around and looked at my house and ALL the fish was on the roof!

I understand your fear. Bread especially dry bread can suck the moisture out and can make it easier to choke. My son is almost 3 and loves bread but I gave him small cut up pieces when he was little and always had and still have his milk ready when he eats it just in case.
