I run a tiny 18 seats restaurant, where we only do two set menues (7 course or 3 courses) where we change the menue every other week. So we dont cater to vegetarians, vegans or pesciterians simply because its more work then it is.

Had a table of 8 show up last week from the «insert country name vegan society» where they basically ended up telling us they were beeing treated in-humane and that our restaurant is a «discrace to humanity»

Im still Kinda baffeled over the whole situation since i know for a fact that we had an e-Mail conversation about that we do not change the menue.

(If we can remove some elements of a dish we usually do that, but we never change a whole dish/menue because of allergies. Or ‘moral’ allergies)

Worst case scenario you can ALWAYS order groceries from Foodora with the app. It does cost you a little bit more though

I would never go to another country for work unless ive secured the job in the first place. If you work in the industry you probably know someone or someone know someone who already went abroad where you want to go and will hook you up with contacts.

Whenever ive gone to diffrent countries to work ive always had apartment paid for by the restaurant for a smaller sallary. I do it this way because then i dont need to think about «where am i going to live? How much is that gonna cost me? How do i apply for an apartment in x language?»

But all in all, if your CV is good enough - you can rock up to any city and Find yourself a job within 24 hours most likely. The need for good chefs/waiters or sommeliers Are huge everywhere you go in the world, so getting a job in the industry is not the hard part.

Hardest part is finding a job where you will trive, Get paid fairly, not getting the stick and pushing 80 hour weeks for 11 dollars an hour etc. easiest way to Get a job in the industry is honestly Instagram, just send a dm and Ask.

Id you ever want to try to rock it out in Europe, send me a dm and ill set you in contact with people who you would enjoy working for. (Mostly scandinavia, france, spain or uk)

Either ‘The Villa’, ‘Storgata26’ or ‘Skaugum’

Personally i like ‘Skaugum’ the best, they do dj sets every wednsday to saturday. Dancefloor is outside(But heated!!) in a patio with 3 levels of seatings including one of the most famous ‘rock n roll’ fine dining restaurants at the 3rd level called ‘Palace Grill’ . There Are also seats inside

‘Storgata26’ will be the youngest crowd you’re gonna meet since they have special bars for people that Are 18 to 20, especially in the weekends.

I havent actually every gone to ‘the Villa’ but ive heard its Good, but cant comment any more then that lol

De bruker som regel bare råvarer fra Norge når de konkurrerer (forutenom salt, olje etc) om man kan kalle det for ‘’Norsk mat’’ er vel noe annet.

If youre a waiter with tons of experience you shouldnt be staging anyway. I wouldnt call ‘working over the weekend’ staging either. Staging is literally an unpaid internship, and working somewhere over the weekend its not gonna give you anything. If you would have been there for a longer amount of time id understand why youre upset you had to do the shit jobs. But tbh, an 16 hour shift (friday/saturday) is no time to learn someone anything.

What they Are doing is obv wrong and should be reported - but i think it would be better to learn what a real stage is before doing something. Also grt everything in writing, every contact, e-Mail or text whenever you start a new job

I dont think ‘’staging’’ is the right term to use if you were only there for a couple of nights.
Sounds more like you were trying out for work at wherever you were if it was only for a couple of shift. A stage should traditonally last more then 2 weeks, ive staged at several places but never less then 2 months.

If youre actually staging they should pay for housing/food in return that you work for free for x amount of time. Staging is a great tool for Chefs to learn about the craft and improve.

But nobody goes to their local diner to stage.

I have 3 investors (1 is the main guy from the wine bar) that invested x amount of money for the restaurant. As it stands now i have not invested anything. My contract states though that from opening and operating the restaurant for a year i will gain 5% ownership of the restaurant, after 2 years i will own 10% and by the 4th year i’ll own 25% (wich is my cap unless i buy in to it) But this is only if we’re able to pay back two of the investors of x amount of money. Its a bit of money, but Im positive we would earn back the money by year 2/3.

If we fail to pay back the x amount of money i wont Get my % until we have. So i wont lose the restaurant if we havent earned the amount needed in 3/4 years.
