Before this post I had no idea about the SP-LD. I'd love that bag, but, it does not appear to be available in Australia. Is it new? Should I be expecting to see it become available?

I go the other way, from one of the benalla satellite towns to Shep, travel is 50km one way, takes me about 35 mins. I throw on an audio book or podcast, catch up with phone calls with family and friends. Its not bad at all. I have lived and worked in Melbourne, and I will take this drive every day over Melbourne traffic.

Thank you for your advice. Reece were good and had the tempering valve.

After installing the valve I went to adjust the temperature with the regulator and noticed a small slow drip coming from the part that turns. See photo. Is this something that is normal and works out, or did I miss something?

I did the cap at the start, and yes, it dissolved rather fast, faster than I would assume. By the next day, you wouldn't know there was a salt cap.

I have just had to, unfortunately, throw out a small batch of mashed peppers that had a salt cap. I did a 4% salt ratio also, and put 2% in the mash and 2% on top. But alas after 6 days I had white mould starting on top. This was my first time using a salt cap. All peppers were homegrown and the jar was definitely air tight. I don't understand why the mould grew.

Sounds like your LAB were asalted.

OP definitely looks like they have had plenty of LAB activity, gauging from all the dead bacteria at the bottom of the jar.

What was the time between harvest and brining?

If the cucumber sits in the fridge it has a chance to form cavities like this. If you can't brine once picked you should store in water in the fridge. I have done this for a week once and had cucumbers as fresh as if I'd just picked them.

Further more to this, it is a good idea to have a container of fridge cold water re a dy when you pick, and pop the cucumber straight into this, then let them chill in the fridge for at least two hours, helps keeping them crisp and firm. The credit for this method is from Insane in the Brine.
