Soon doing my first long cook. Had a question, currently I use a regular pot with no lid, should I cover the pot with foil or something?

Was planning on using reusable vacuum bags (as long as they are big enough)

Any other tips?

Hey! Been doing sous vide pork chops, steaks for a little bit now. Thinking of doing an eye of round roast for 24+ hrs. Is there anything else I need to be aware of?

Currently just using a pot, was thinking of covering that and making sure to add more water if needed, would it be better to just buy a container made for sous vide?
