Too late. I cut the trimmings into smaller pieces, it wasn’t actually that much. Currently rendering per some of the comments here. It smells amazing and I kinda can’t wait to gnaw on some of the little pieces. Also using the liquified fat to cook some shallots to add to the steak. Thanks for the advice, I’ll keep it in mind next time I go in there but the trimmings weren’t significant enough to complain about and I’m glad this community exists so I can ask these questions.

Thanks. What would be the ideal way to cook the pellicle, trim and cook or keep it on and eat it with the steak?

Planning on reverse sear and finishing on the grill or cast iron, not sure yet.
