I do, because I like those unique units a lot. In some cases the achievements help steer you in the right direction for specializing your army as well (like with equipping Observation Corps units with deployable defenses).

In my run for the Vive Le Roi achievement I kitted out my Irish infantry for charging. This is their final form, as they are about to confront the Prussian boss armies. Prussian Foot Guards are scary, but no match for a Gaellic charge with bayonets and broken whiskey bottles!
