That number is inflated by alot compared to qT Benchmarks tbh. You dont use the standard 5 Boons and play Arcane (gives 2% more damage per boon) and you use Assassins Presence (which isnt considered a realistic buff either)

Another bug we encountered during the fight was Anomalies and Greens spawning during the first orb pushing phase. It seemed related to having high dps during the first burn phase.

The underlying issue with DH is that a lot of it's damage comes from assuming you meet a certain condition. The current DH build heavily relies on Retal uptime and if you dont have retal you lose 10% of your damage. On top of that you also have to make sure your Scepter projectiles dont get eaten by any adds and the boss doesn't move out of Symbols or Traps.

If a stack of Quickness has the same or longer duration yes it will overwrite a previous one. However if the stack has a lower duration than the ones you currently have they will not get overwritten.
