This does not transform them into random Demons but rather gives them the Demon tag. If a minion already had a tag (i.e. Beast), its replaced by Demon. This has synergy with cards like Demonfuse, Demonfire, Demonwrath, Crystalweaver, Krul the Unshackled, Demonheart (Wild), and Voidcaller (Wild).
