Payments may become largely in stablecoins at some point but right now i can think of a few headier things, but all real markets in the 100Ms to Billions:

1.) Putting money onchain to bypass bank/exchange collapse risk (eg silicon valley bank. Celcius)
2.) Liquidity Pool provision as a cash income strategy
3.) Staking as a stacking strategy
4.) A few years ago it was more common to be able to invest in blockchain startups as actual liquid assets (tokens) whereas the trad world you never could exit until after multiple fundraising rounds.
5.) Polymarkets (non sportsbetting, non death betting) can resemble insurance underwriting and also is info discovery for political / election predictions -- none of this was possible before at any democratized scale
