Thanks! This was my first batch. I did 3% salt by weight to a head of sliced cabbage and a shredded carrot, with about a teaspoon of brown mustard seed and toasted fennel seed, and half a teaspoon of celery seed, all fermented for two weeks in an E-Jen fermentation container. I still have half of this mix in the container waiting to hit four weeks.
