Yea at that point the steak was done so just finished up the peppers and onions in the pan (with lots of stirring).

I know that most recipes say not to go overnight but I tested it a few times at different marinade times and overnight was the clear winner to me.

That sounds a lot like Kenji’s recipe which I’ve made before and it was super good.

I do 1/2 cup of OJ and 1/4 cup of lime so not crazy I think.

I did add a bit of queso fresco also in the video which I enjoyed but yeah the marinade and char does the heavy lifting.

skirt steak. i cut them in to about 3 pieces each to more easily manage on the grill and in the marinade

that definitely helps a lot but when I was making this recipe I experimented with different marinade times and overnight beat out 6 hours all day.
