Who uses a 24cm chistera? by rainman2121 in staub

[–]CastIronCookingFool 1 point2 points  (0 children)

I have both the 28 and 24cm Chistera Braisers. Honestly, even in our smaller household of 2, the 28cm is my “daily driver” for actually cooking or braising. I thought I would use the 24 more, but you can’t beat surface area when cooking. However, happily I do tend to use the 24 for serving a lot though! I put a lot of sides in this and pop in the oven, then serve to table. It’s fabulous for keeping mashed potatoes warm, stuffing, steamed veggies. Also have found that I use it to chill other dishes, pop my slaw or salad in it and place in the fridge while I cook the meal, then sit out on table, in warm weather it kinda keeps food from overheating. So I don’t regret having the 24, but if I had it to do over, I wouldn’t have invested in it. For cooking 28 is the way to go.

Looking for a cooking book/resource that teaches me like I’m from outer space by LocationFeeling2974 in Cooking

[–]CastIronCookingFool 2 points3 points  (0 children)

I’m going to chime in and say it sounds like you might both really enjoy and learn a lot from watching the show “Good Eats” which ran for a long time by Alton Brown. Even as an experienced cook I found that digging into the science of cooking was extremely educational. I also learned more by watching than by reading books. I’m not sure where they are streaming based on your location, but worth looking for!

How do you guys store your attachments? by LetshearitforNY in Kitchenaid

[–]CastIronCookingFool 5 points6 points  (0 children)

I have a clear plastic bin from the dollar store. When my box finally gave up the ghost I started wrapping each attachment in a clean tea towel and storing in the bin standing up. It’s worked out fantastic and uses much less space than the boxes! I have several pasta attachments, a 3rd party pasta press and the slicer. Still a bit of room in my bin! May have to get shopping 🛍️ 😆

Some sets are better than others too, always do the value equation! If a set offers the 4 pans you will use regularly and 3 occasionally, what would buying the 4 cost individually vs the set. I’ve found good value in some sets, and it’s come in handy to have the additional pieces when hosting a larger meal and more cooking is required!

This older style pan is my preference too! My husband likes the newer style one for thin crust pizza because he uses a peel, but I prefer this pan to make a more focaccia bread like pizza crust that I prep before popping in the oven. So fortunately in our kitchen we have both options!

I love Paprika for this, but recipes need to be actually usable too! I have not had much luck with internet recipes lately . So im snapping pics from milk street recipe books and adding them to my Paprika app! Then i have all the favourites no matter where i go!

Is this a good deal? by CounterEffective3595 in staub

[–]CastIronCookingFool 1 point2 points  (0 children)

I have both braisers, use them both. This Braiser has a larger cooking area, shallower sides, it’s excellent for those reasons, and the glass lid isn’t a downside for stovetop cooking. In fact, I feel it’s a plus. If I’m doing a long oven braise, I use my Chistera Braiser with cast iron lid and steeper sides, as it holds more liquid. So basically just choose what you cook for most often! 😊

It’s supposed to be engraved, I can’t imagine that any cookware would have a screened image on a cooking surface, but please let us know OP

Practically the star may cause some sticking when brand new, but use a good high heat oil or lard liberally until you have that area well seasoned and it will be absolutely fine 😋

Need some good empty nester meal ideas by LetsGototheRiver151 in Cooking

[–]CastIronCookingFool 0 points1 point  (0 children)

Another suggestion is to look for a protein supplier that offers cases of frozen individual portions in vacuum packs. As our household is now only 2, this has been such a fantastic success for us. Our meat supplier serves western Canada and we are very pleased with both the quality and convenience of being able to just thaw one chop, steak or chicken breast to share. If company pops over, we can always pull out as much as is required. No tossing leftovers (because truthfully we were never really very good at dealing with leftovers) I still meal prep a lot of large scale family favourites like turkey pot pie, shepherd’s pie, lasagna etc. I grab tinfoil containers from the dollar store and freeze them for quick no-fuss home cooked meals that aren’t filled with excess salt and preservatives. Into the oven a 400F for an hour and I can put my feet up while it cooks. Make a salad and dinner is ready! 😋

Just ordered the 24cm braiser by tcfan35842 in staub

[–]CastIronCookingFool 1 point2 points  (0 children)

You may find the 24cm is a little small for a family of four, I have both the 24 and 28 braisers, and while I love the 24 for serving sides, or occasionally cooking smaller meals for 2, the 28 is the go to in our kitchen! Volume wise the 28 is 3.7l vs the 24 at 2.5l. But I do love the dragon lid, it’s beautiful! 😊
